This week, we will be learning how to make Chicken Fajita Quesadillas with Holy Guacamole! 

To make these recipes, you will need:
Guacamole3 Haas avocados (halved, seeded, and peeled), 1 lime (juiced), ½ teaspoon kosher salt, ½ teaspoon ground cumin, 1/8 teaspoon cayenne, ½ medium onion (diced), ½ jalapeno pepper (seeded and minced), 2 Roma tomatoes (seeded and diced), 1 tablespoon chopped cilantro, 1 clove minced garlic
Quesadillas: 1 lb. skinless boneless chicken (diced), 1 packed fajita seasoning mix, 1 tbsp vegetable oil, 2 green peppers (chopped), 2 red onions (chopped), 1 onion chopped), 10 flour tortillas (10 inch), 1 8 oz. package shredded Monterey jack and cheddar cheese
